While whisky from the distillery is usually very smoky, this yearly release looks at the distillery's other, less well-known side: unpeated spirit. The 2018 bottling was matured in refill and rejuvenated American-oak hogsheads and ex-bodega European oak butts, which give a balance of elegant vanilla and orchard fruit, and richer, sherry oak flavour.

The grapes were picked early to retain freshness and acidity. A small portion of the Chardonnay was fermented in seasoned French oak adding depth, complexity and structure to the wine. Aromas of citrus fruits, melon and white peach lead to bright tropical fruit flavours on the palate with refreshing acidity. On the finish hints of vanilla and cashew nut are derived from partial new French oak barrel maturation.

Grand Barossa Riesling grapes are selected from our estate vineyards on the Biscay soils of Tanunda and the deep sands of the Vine Vale sub-regions. Some of these vines are 100+ years in age, adding to the complexity and depth of flavour of this wine.  It is this tapestry of ‘terroirs’ which enables us to create our classic and refined house style. Aromas of aromatic musk, ginger and zesty citrus lead to textured stonefruit flavours on the palate with a crisp refreshing finish. Although drinking beautifully now this wine may be cellared for up to eight years from vintage.

Selected from the finest 32 rows of Cabernet Sauvignon on our estate vineyard in the cool climate of the Eden Valley. TASTING NOTES ‘The Château’ Cabernet Sauvignon displays deep, rich purple and red hues. The bouquet has lifted aromas of blackcurrant, redcurrant and spice on the velvety smooth palate with hints of cedar and mint. The extensive finish is framed by elegant, fine-grained tannins from 18 months’ maturation in a combination of new and seasoned French oak barrels. WINEMAKING The grapes for this year’s The Château Single Vineyard Cabernet Sauvignon were grown on our estate vineyard in the cool climate of the Eden Valley. The grapes are destemmed, but not crushed, and spend seven days on their skins in open fermenters with regular battonage to more gently extract colour, flavours and tannins. Following fermentation, the wine is carefully basket pressed prior to maturation in a combination of new and seasoned French oak barrels for 18 months.
